I don't measure the angle, mainly look for a shot I like. I think that most of my shots range from 30 to 60 degrees. I recommend you move your ipad or your head until it looks right, at which point you're probably close to the positioning of the camera

My specialty is phantograms. The key issues are shooting at an angle and reversing out the effects of perspective. I'd be happy to explain more if you're interested, but suffice it to say that they try to imitate normal vision, give the eyes what they really get.
