So, I'm not sure what went wrong. I looked on Youtube and the video is a very low resolution (240p). I'm not sure if it was recorded at a low resolution on your i-Pad Or if, your software was set wrong when it was rendered.
In a way, this was a good thing. We can all use this as a learning experience. It's good to show our problem videos as well as our good videos so that we can learn. If all we ever see is our videos that we spend hours trying to perfect, and never see the problem videos, than it is hard to learn.
I love the subject matter of your video. It looks like you were right out in the tea gardens with the workers.

A very beautifully done (hard to accomplish) technical video. As Peter said, I assume that the transition between day and night was done by using auto ISO. Is that how you did it? I thought is was done brilliantly.
You had mentioned the light pollution from people turning on their torches and light painting the light house. I didn't find it distracting at all. You were capturing the moment as it happened and I thought it turned out really nice.
Another thing that I thought was interesting was the airplanes flying through the video. To me that was more distracting than the light painting. But, as I said you were capturing the moment and they were both out of your control.

I must say that shooting a video like this one is a interesting challenge. The subject matter was good and the video itself was well thought out and edited beautifully.
Trying to shoot in a large conference room and capture good sound is very hard to do. I think that the sound would have been much better if you would have used your DSLR with shotgun Mic. In A lot of the video you didn't use the recorded sound at all, and just replaced it with gentle music, which worked out very well.
I really liked the beginning of the video where you showed the still pictures and short video shots of Washington.
The Spokane conference looked like it was a fun and educational time. I would have liked to have been there with you.
